Also known as ‘testi kebabs’ it is a traditional kebab variety of the Cappadocia region of Turkey.

This Kebab variety has various names in English such as pottery kebab, clay kebab and terracotta kebab.

It is made with lamb cubes, shallot onions, tomatoes, garlic, long green pepper, black pepper, butter and tomato paste.

Originally in Turkey, Testi Kebab was served in large clay pots and was served to customers directly onto their plates.

Later, it was found that it was too difficult to serve equal amounts to all the customers at the table, to Avanos pottery producers started to make single-serve pots, which allowed fairness in distribution and helped the meat to cook much better.

The manager of Taste of Turkey in Manchester Road said: “I have phoned many Turkish restaurants in London and the South and I know for sure that nobody in the North cooks this.

“Why we decided to cook this dish? Because we are an authentic restaurant and want to introduce our guests to the best traditions of Turkish cuisine.”
