Simon Dunn Chocolatier in Friargate is understood to be trading sporadically and is being eyed up by Yo Burrito.
Yo Burrito currently operates as a takeaway only service from Fylde Road.
A statement from Jamie Palmer says: “The property will trade as a Mexican Burrito cafe/restaurant called Yo Burrito.
“There will be two floors where customers can sit and eat their food, the ground floor (sales area with seating) and also a first floor seating area.
“These areas have most recently been functioning as a coffee shop and chocolatiers (Simon Dunn).”
Mr Palmer, who also runs the Indian Express catering and takeaway in Fylde Road, says the burrito fillings are to be made there and then transferred to the city centre outlet.
He goes on to say: “We do not believe there will be any undesirable impact on the sustainability of the shopping area that surrounds the premises.
“We will be investing heavily into this project, and as a result, the outlet will be attractive in its appearance and be a welcome addition to the area.”
The restaurant would be open from 11.30am to 11pm, seven days a week.
