The Olive Tree team are adding a Preston restaurant alongside Lytham

A new restaurant in the Miller Arcade is beginning putting the finishing touches ahead of opening.

The Olive Tree Brasserie announced it was expanding from its Lytham base to venture into Preston’s city centre.

Inside the spectacular architecture of the Miller Arcade its owner Dean Wilson is promising an upmarket dining experience, with £350,000 spent on kitting out the restaurant.

Mr Wilson, director of the restaurant, said: “The look I have gone for is a modern yet rustic look so you still get the feel you are in a Greek or Mediterranean restaurant but modern at the same time instead of your typical greek taverna, with designs I’ve tried to think outside the box and be a little different to what people of Preston are used to.

“We’ve had a good design team on the job and have come up with good ideas once they’ve been given direction. There will be two kitchens with the one on ground floor open so it becomes a theatre for customers and adds to the atmosphere.”

The opening night on Monday 24 November is due to see Coronation Street’s Jason Grimshaw and Emmerdale’s Adam Barton open the restaurant.

More than 20 jobs are to be created and Olive Tree says it will be using as much Lancashire produce as possible in its dishes.

“We pride ourselves on using as much local and seasonal produce as possible”, said Mr Wilson, “I am a strong believer in supporting the local economy, if its not from Lancashire its probably form Greece.

“We are also a member of MSC which means we use seafood from sustainable sources that isn’t as damaging to stock levels. We serve all your Greek classics but have a our own modern twist on the dishes, meze banquet menu, early diner 2 and 3 course deal, special lunch menu, kids, cocktails and daily specials.”

There are already plans to extend the restaurant, with an area downstairs becoming a cocktail bar in 2015 and being offered as a private function area.
